Xolo

Xolo is a cultural project born from the collaborative vision of Aldo Camarena and Ashley McKay. Aldo, originally from Mexico, and Ashley, a Canadian chef, joined forces to build Xolo as a space where urban Latin‑American cuisine meets curated musical selections, offering experiences that blend flavor, rhythm, and community.

As a pop‑up concept, Xolo combined dishes influenced by Chicano and Latin American culture with thoughtful musical curation, bringing a fresh, authentic vibe to Toronto’s cultural landscape. Their presence at local events and the way they blended food and sound helped establish Xolo as an innovative creative force in the city.

Over time, this momentum evolved into a permanent restaurant called Antylia, a space dedicated to exploring the flavors of the Americas and strengthening the cultural ties of community.
